Egg Mess


pre-cooked bacon (3-4 slices)
6 cups hash browns
1 green pepper (any veggies you'd like can be added)
3 Tbsp butter
6 eggs
1/4 cup milk
3/4 tsp salt
1/4 tsp basil
1/8 tsp pepper
8 oz shredded cheddar cheese

1. Cook bacon and crumble. Set aside for now.
2. In a 2 1/2 quart casserole dish (microwave safe) mix potatoes, green pepper and butter. Cover and microwave on high for 7-8 minutes, stirring once.
3. Mix in mixing bowl egg, milk, salt, pepper & basil. Pour this mixture over potato mixture in casserole dish. Cook in microwave at 70% power for 6-8 minutes (or until eggs are almost set). Stir every 2-3 minutes.
4. Sprinkle with cheese and bacon. Cook uncovered on high 1-2 minutes (or until cheese is melted).
5. Let set for about 5 minutes.

  1. Since you can do this in the microwave this would be great for a breakfast meeting/potluck. Yummy!

  2. Yes you could! I like to make it on Sunday evening so that Mike & I would have a yummy breakfast to heat up really quick before work for the first part of the work week. You can really put anything in that you want! We also like broccoli in it.
