1 1/2 cups all purpose flour
1/2 cup whole-wheat flour
3/4 cup sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsweetened applesauce
3/4 cup fat free Greek yogurt
1/3 cup canola oil
2 large eggs
1 large egg white
1 teaspoon vanilla extract
2 cups shredded zucchini
1. Preheat the oven to 350. Spray a 5x9 inch loaf pan with non-stick spray.
2. Whisk the flours, sugar, cinnamon, baking powder, baking soda, and salt together in a large bowl. Whisk the applesauce, yogurt, oil, eggs, egg white, and vanilla together in a medium bowl. Add the yogurt mixture to the flour mixture; stir just into the flour mixture is moistened. Stir in the zucchini just until combined.
3. Scrape the batter into the pan. Bake until a toothpick inserted into the center comes out clean, 1 hour 10 minutes. Let cool in the pan on a rack 10 minutes. Remove the cake from the pan and let cool completely on the rack.
